FLAVOUR PROFILE

Taste: Beet kvass has a sour, salty, and faintly sweet taste with an earthy undertone. The sourness comes from the fermentation process in which bacteria feed off the sugars in the beets and convert it into lactic acid. Himalayan salt brings in the briny flavour and kills the harmful bacteria while allowing the healthy lactobacilli to flourish. It is fresh and refreshing and also has a slight savoury taste.

Mouthfeel: Beet kvass has a more interesting, tart, and complex mouthfeel as compared to beet juice. It is mildly fizzy due to the carbon dioxide produced by the bacteria. 

Smell: There is a clearness and freshness to the smell of beet kvass which comes from the earthiness of beetroot. It has an astringent smell, due to the sourness of the fermentation.
