In an era dominated by heavily processed, sugar-laden, artificially flavoured foods; kombucha emerges as a healthier counterbalance with soothing effects on the body. My grandmother once shared a fascinating myth from the 1960s about a miraculous drink. It was believed to be a remedy for pain and suffering, which in fact was kombucha! One would mix tea and sugar and after a few days, a layer would form on top—what we now recognize as SCOBY (Symbiotic Culture Of Bacteria and Yeast). Once the liquid was ready, the drinker would sip it for healing, passing the new SCOBY to someone else in need. This story sparked my curiosity, leading me to explore the world of kombucha.

 The all natural health drink is known as the elixir of the ancient world. Made by fermenting the combination of sweet tea with active culture to create a tart fizzy drink. The active culture aka SCOBY feeds on the sugar in the tea and produces a miracle portion that is known for detoxifying the body and maintaining a healthy gut. 

Today, we continue this tradition at Bombucha, brewing Kombucha in glass jars and small batches, just how my grandmother made it. As the first commercial brewers of kombucha in India, we take pride in crafting the cleanest, unpasteurized kombucha possible. Patience and observation with all of the senses is important for a successful ferment because brewing Kombucha is both art and science! Brewing with the purist approach requires more time and patience but it is a labour of love. It  may be cumbersome at times but the final result with great taste and a ton of health benefits is worthwhile! Using a variety of teas, like a blend of white tea and green tea for the subtle flavours and some with a blend of Oolong tea and black tea or pinewood smoked tea, we create unique flavours for added benefits.
